white flour has 95 grams of carbs in it, doctors recommenced you don't have more than 225-300 grams per day
but if your south Asian and you eat roti (flat bread) you can eat a few of them and in one meal you have reached your daily dose of carbs, this is just in one meal ... this is why diabetes 2 is the highest in countries like India, Pakistan, China etc...

you know people always say they want to live off the grid for good, but if your diabetic you going to have to go back to get your medicine, so staying of the grid fulltime is hard if you need medication on a regular basis.

I’ve made roti a few time
Dig how the buff up in the second it takes to cook them. One thing that seams sensible to do with starch foodstuffs is not to buy any with more than three or four ingredient. Cuts out all those preservatives and other chemicals there most made with for mass distribution

DAY 15 of no sugar
been having lots of vivid dreams almost every night for the past few days.
did a quick Google and found out; that lots of people have the same issues when they quit sugar, something about the brain rewiring itself and dopamine.
still getting mild headaches and periods of irritability and self-loathing and depression...

still getting mild headaches and periods of irritability and self-loathing and depression...
When giving up sugar, the brain undergoes several changes,
Dysregulation of dopamine release: Excessive sugar consumption can lead to this, similar to what happens with addictive substances.
Decreased dopamine release: Cutting down on sugar helps recalibrate the brain's reward system, leading to reduced cravings.
Endorphin withdrawal: Sugar causes a release of endorphins, and their absence may lead to cravings.
Emotional and mental symptoms: These may include depressed mood, anxiety, changes in sleep patterns, and cognitive issues.

nice on Lrus keep it up and reap the benefits..
i lost 9 pounds in 14 days, eating once a day and quitting sugar
I also eat peanut/almond butter with no palm oil in it for protein.
no more potatoes/pasta and white bread, it is hard to find bread with no gluten where I live...

"Now that we’ve been cooking gluten-free for years, we wanted to share what we’ve learned in the process, as well as a bit about our own Minimalist Baker Gluten-Free Flour Blend, and our favorite gluten-free baking recipes.
Where to Start?
We’ve found that when baking with gluten-free flours, it’s typically best to use a mix of different flours and starches to achieve the ideal texture and flavor. This is because all-purpose flour adds stretch, lightness, crispiness, and neutral flavor to baked goods. With gluten-free, you need a few different flours (depending on the recipe) to replicate these characteristics of gluten flour."

the oak trees in baldy canyon were we climbed for years produce the biggest acorns ive ever seen. a couple times i collected them and processed them into flour. made pancakes out of it.
