vanilla extract and vanilla sugar

is oct 31st. lets make a witches brew.
first off spent a mint on 1/2 lb each of grade A and grade B
madagascar bourbon vanilla beans.

then beans everclear and a brown jug.

took and dropped beans into jug.
112 grade A and 300 grade B i counted as i added.
that is counting ones i saved for the sugar.
into the jug went 1/2 cup of wild turkey for bourbon flavor.
then everclear mixed 50/50 with water to make 100 proof.
14 and 1/3 cups to fill to the top. now shake every so often
will take 12-18 months. closer to the 18 because i did whole
beans vs splitting them.

saved out some beans to make vanilla sugar.

then added 4 cups sugar laid 2 short beans across and
2 longer ones pointed up.

then 4 more cups and 2 across.

4 more cups and 2 across.

then filled to top last 4 cups.

sealed jar and will be ready in 6 months or so.

well i did not split them for a reason.
i don't want specks in some desserts.

thought about it. i moved my sugar from a 1 gal jar
to 4 qt jars. that way i can use and rotate as i use it.
1st the mess lol

then 2 beans per jar.

then 4 qt's and a little extra cuz i had gallon topped off.

i should get my next batch of vanilla beans in a day or two.
different kind will do a gal jug of extract and 4 more qt's of sugar.

i got my beans today. but got chores so maybe
tomorrow i will make more extract. also thinking
i will just do 2 qt's of sugar with these beans.
i will snap some photos. ordered 1 lb. came in
4 vac sealed bags. 8 oz. 4oz. and two 2 oz.
when i open them i will weigh them. last beans
was 1 1/2 grams short. this is a different co.
they look good. also a page of good info.

here we go again.
tahitian grade A vanilla beans 550 grams 132 beans.

is a bigger gallon jug. 15 cups everclear and water 50/50 mix.
also 1/2 cup wild turkey. a gal is 16 cups beans least 2 cups
does not add up but that is what it held. i only did 2 qt's of
sugar because is a milder flavor with this kind of beans.

now the year or so wait.

WOW!! I was at the local organic shop yesterday, to buy some grains for sprouting. They have a area where you help your self, to any of the hundred or so bins, scooping out what you want.
They also have a shelf above the bins, that holds spices, specialty items V-C, and I saw yesterday, Vanilla Beans,$10.00 a bean, or the container was $800.00+ and not really that big of a container.
Pretty cool seeing you work these, more than ever for me.

ya there not cheap. $160 for the 1st lb.
and $140 for the 2nd lb. then booze and sugar.
will be worth it in the long run. i use about a cup
a year. also i can add booze as i remove extract.
can do same amount of booze as you began with.
so you remove a cup of extract. you can add 1 cup
more booze. thanks for looking..

i see bins of malted grains at the store for homebrewers
