jalapeno's

i just got given 4 sandwich bags of fresh jalapeno peppers

must be more than half a gallon

i eat mabe 2 or 3 a week so there no way im gonna get throught all these!

any preservations to be recommended?

Freeze 'em right off. i've frozen my habaneros, and thaw 'em no problem. some still in the freezer.

Or split 'em first and stuff with a cream cheese/bacon stuffing then freeze, later roast on a grill or in the oven. on a sheet of aluminum foil in both cases is easy.

Or cook 'em down with onions, garlic, tomatoes herbs and such and make a homebrew hot sauce, freeze or give away as gifts ,,,,

Or pickle 'em and jar 'em up, i posted a recipe around here somewhere for a quick easy one.

Stuffed jalapeno:
~ dozen jalapeno
1/2 minced onion
1 cup cream cheese
1/4 cup chopped cooked bacon
Herbs (cilantro oregano chives lemon ect)
salt

Mix all, 'cept jalapeno.
Slice lengthwise and de-seed the peppers (WASH hands)
Stuff peppers and Maybe a little grated cheddar, jack or parmesan cheese on top

Arrange on a sheet of aluminum foil place in oven (4000), or place on grill or campfire ect
Bake/roast til peppers are a little brown and bubbly.
Serve with cold beer.

Easy pickled jalapeno:
1 cup rice vinegar
2 tablespoons sugar
1 tsp salt
~10 Jalapenos, thin sliced with seeds.
Mix all together, cover and let stand for at least 2 hours, a day is better.

Alternately you can cook ‘em too. Add water and onion, garlic to the above mix minus peppers and bring to a boil.
Then add jalapenos covering completely, remove from heat, and let stand for 15 minutes. Pack mason jars full with jalapeno and top with remaining liquid. Cool. Refrigerate.

As an honorary mexican jalapeno eater

Make salsa hot sauce and freeze it in mason jars.

When I go to eat I ask for the hottest sauce. and the white girls always say." I can give you what the staff eats."

Meaning the real beaners.

and you can bet hellfire breaks out.

P.S> stay away from the cow stomach soup if you can't handle the worst tasting meat in the world.

P.S.S. the soup is okay just don't try to eat the stomach.

P.S.S.S. Maybe I'm stupid your not sposed to eat the stomach? What a bitter knot.

I know it was here a second ago.

Bastards know we need some kind of RFID shit but they like to tease us.

Cus if you ever think "oh my hell know? What if I call them and ask where my remote control device is? Your so hung over from the night before you don't know what the hell your doing? Did I turn the coffee pot on?

So you call them and you say the usual nice stuff to get in and suddenly, you hear them snickering in the b ackground.. trying to muffle the call....

... guessed whispering.. as best I can... they all going..... "lol.. dumbass..white man" "fuck ass ..sucker...."

So, finally this one guy comes on and he is all.. ... Obviously, be condescending and trying to hide continued snickering. "Yeth thir ..." snicker "Whut kin ah dew fer yew?"

man oh man
the "hottest" sauce around here has always been the orange-yellow and its habenaro's
i used to try and slather that stuff on
but it was too much
could only had a few dashes to the serreno pepper stuff i could tolerate

and ive had cooks come out of thai shops to meet whos keeps ordering the Khao phat
at 7
