Yesterday's dinner. cooked with olive oil and garlic and tossed into pile of angel hair pasta

there is zucchini, yellow squash, yellow and purple beans, padron and green chilies,

tonite’s dinner

Leek, padrone and green chili, bell, beans, zucc and yellow squash and oregano.

Small chop everything up and cooked till soft

Then and add a can of condensed mushroom soup, reduce down to a sauce . Layer it in a baking dish with corn tortillas, the veggie sauce and cheese.

It is baking in the oven right now, will be done in about 45 minutes, and then let it in cool for another 20 minutes.

Here is the finished product. And it was is freaking good! Complex vegetable flavors.

Today’s harvest/dinner, notice the still lack of ripe tomatoes. .. still i love beans and peppers.
