I don’t know about freezing ‘em mate, never tried it. But I for storage I string ‘em up and dry ‘em.
Or some people are into pickling ‘em.
Yep, I always pick a few peppers right away (especially the bells) to promote more fruiting. Same with beans more ya pick the more ya get.

The Chilli Lovers Thread
Freezing chilli about the quickest and easiest way to preserve your crop.
No heat or vitamins are lost.
I wash them well and let them dry completely.
Now is a good time to remove that stalk as its a bugger to remove once frozen.
When all your individual chillis are dry, pop them in a freezer bag and place them in the coldest compartment to freeze quickly.
As they're dry they shouldn't stick together when frozen so its easier to get them out for cooking.
I don't bother to defrost, I just chuck em into the cooking frozen but they do defrost quickly but will have lost their firmness so are suitable for cooking rather than eating raw.
I've frozen about half my crop and the others are made into chutney and chilli jam.

We have been freezing tomatoes,(whole, sliced,chopped) cherry tomatoes, cubanel peppers, green peppers, spinach, brocolii, corn. we froze herbs, not pull some out chop off what you need and back into the freezer. Just as fragrant as when we put them away.
I was always told vegtables/herbs would be shit when defrosted...to that I say NONSENSE!!
The first year or 2, I thought it was a flulk everything was defrosting like it was just picked.
I do think the quicker it freezes the better it is.
Now this year, I'm buying another freezer, and my garden will keep supplying fresh veggies all through winter.
I was always told vegtables/herbs would be shit when defrosted...to that I say NONSENSE!!
The first year or 2, I thought it was a flulk everything was defrosting like it was just picked.

you can use an ice chest and a block of dry ice to speed the process and get even better results for rather miniscule effort and money.
once stuffs frozen, you just move it to your appliance freezer.
